Founded in 1999 by Jose Omar Rodriguez, the great-grandson-in-law of the original farm owner, it takes its name from the local town of Las Capucas. \u003c\/p\u003e\n\u003cp\u003eHarvested on 8 local farms, the coffee is washed and dried in the coop's solar dryer (first in the country!) before being shipped to the decaffeination center.
