Finca Humana (the Human Farm) is the first thing you will hear about Café Organico Marcala, S.A. (COMSA) if you make your way to visit this cooperative in Marcala, Honduras. The wellbeing of humans is foundational to the COMSA philosophy and educating more than 1,500 producer-members to successfully live in harmony with nature is everywhere at COMSA. It starts with the La Fortaleza, the COMSA biodynamic demonstration farm where the focus of transferring knowledge takes place through week- long seminars called Pata de Chucho (pawprints left by a stray dog), which aptly reveals COMSA’s dogged exploration for human productivity in harmony with nature.

Now recognized as innovators in organic techniques—from carbon sequestration, to methods of drying harvested coffee, to the recycling of wastewater—they share their practices with neighboring countries to find indigenous solutions to problems such as coffee rust. 

In 2001, COMSA were certified organic, and in 2006 achieved Fair Trade status. COMSA provides much-needed employment to many local farmers and workers, and using the premium they gain from their excellent product for important social projects in their communities.

We love the smooth liveliness of this coffee, a foundation of milk chocolate, with a slight apple fruitiness, and a hint of lemon on the finish. We roast it medium-dark, for a really delightful cup.
