Size

High in the tallest mountains of Honduras in Central America lies a progressive coop called Cooperative Cafetalera Capucas Limitada, or Capucas as they are better known. Founded in 1999 by Jose Omar Rodriguez, the great-grandson-in-law of the original farm owner, it takes its name from the local town of Las Capucas. 

Harvested on 8 local farms, the coffee is washed and dried in the coop's solar dryer (first in the country!) before being shipped to the decaffeination center. Capucas also has many initiatives to improve the lives of workers and the local community, including paying for a local GP to treat workers for free in their health center in Las Capucas, and providing university-level education for their workers. Capucas is a pioneer in the R&D of organic fertilizers, beekeeping and honey production, solar dryers and fish farming, helping growers improve their crops, diversify their operations and better support their families.

The Mountain Water Process is a 100% chemical-free process that removes more than 99.9% of the caffeine, while retaining the original characteristics of the coffee beans.
